From Farm to Plate: Our Visit to the Pfunerhof in Gnadenwald
This was our trip to Gnadenwald – more precisely, to the Pfunerhof farm run by the Wolf family. Located on the sunny plateau of Gnadenwald, surrounded by meadows, forests and the clear alpine air, this is the farm where we source our Wagyu and Angus beef.
For us, this visit was truly special. After all, anyone who works with high-quality products every day should also know where they come from, how they are produced and how much work, responsibility and passion goes into them.
Quality begins with animal welfare
At Pfunerhof, we were able to take a look behind the scenes and see where quality truly begins. The cattle are given time to grow, plenty of space on pastures and alpine meadows, and are cared for with great attention and love.
For us, animal welfare is the most important foundation for high-quality meat. This includes GMO-free and hormone-free rearing, keeping the animals in a way that meets their natural needs, and treating them with respect.
An important experience for our apprentices
The trip was especially valuable for our apprentices. In the kitchen, they work with high-quality products every day, while in service, they explain and serve these products to our guests. That makes it all the more important to build a real connection to the food they work with.
Seeing on site where our Wagyu and Angus beef comes from makes a big difference. It helps us understand why quality takes time, why good animal care matters so much, and how much knowledge goes into breeding these animals.
Farm tour, insider knowledge and many impressions
During our farm tour, we were able to see the Angus, Wagyu and Chianina cattle up close – and, of course, we also got to stroke them. Along the way, we gained many fascinating insights: from breeding the animals to their care and feeding.
The Wolf family shared a lot of insider knowledge with us and showed us just how much responsibility and experience goes into the work at Pfunerhof. It is precisely these personal insights that make visits like this so valuable.

We would like to sincerely thank the Wolf family and Pfunerhof (Tierol) for the fascinating farm tour, the wealth of information and the lovely time spent with the animals. For our team, and especially for our apprentices, it was a trip that will be remembered.
Because good meat does not begin in the kitchen. It begins with animal welfare, time, responsibility and respect.
